Cabernet Sauvignon
2006
This blend was made to fulfil Mont Rochelleās MIKO premium range. It comprises of 85% Cabernet Sauvignon, 7.5% Petit Verdot, and 7.5% Syrah. All grapes used in this blend come from the Mont Rochelle farm, giving an idea of what Mont Rochelleās fruit is capable of producing. An intense inky red colour is understated by classic cassis with hints of blackberry and a perfumed finish. The palate is highly concentrated with nice fleshy fruit and elegant, yet structured tannins that help contribute to the length and balance of the wine.

Vinification : Hand picked at 24.5 to 25.5° Balling. All three varietals treated separately. Cold Soaked for 3 days with tannin for colour stabilisation, Fermented in Stainless steel with D80 and F15 yeast strains. Pump overs occurred every 6 hrs, up to 5 brix. Cabernet portion exposed to post fermentation maceration for 2 weeks. Malolactic in Stainless steel, racked to barrel and was aged for 26 months in French barriques. 40% new wood balance 2nd, 3rd and 4th Fill. Barriques originate from COF, Betranges, Never forests in France. Blended and bottled unfiltered and unfined so as to not hinder the integrity of this fine wine.
